I will just HAVE to try this. Since our loquats only give it up once a year, this will be the time.
8 cups of loquats
1 cup of sugar
½ – ¾ cup water
4 tbsp. flour
¼ tsp. ground cloves
¼ tsp. ground allspice
1 tsp. cinnamon
¼ tsp. ground ginger
⅛ tsp. salt
1 tsp. vanilla
Top and bottom crust for 9-inch pie
Wash, peel and quarter loquats, removing seeds. How to peel a loquat.
Cook loquats and water and sugar on medium heat for about 15 minutes, stirring frequently.
Combine the dry stuff and stir into loquats. Cook until thickened, 10 – 15 minutes, remove from heat and cool.
Add the vanilla.
Pour into pastry-lined pan, create the top crust according to your whimsy, and bake at 450 degrees for 10 minutes, then 350 degrees for 30 minutes. Let cool for at least two hours before serving.
