Recipe I Neiman Marcus Cookies

It’s been a while since I made these. Once my weight-loss journey is over (just about 10 pounds to go!), I think I’ll give it another go.

First off, this makes 112 cookies, so unless you have a HUGE appetite or you’re cooking for your kids school project, you might want to adjust the recipe. But if you make the whole batch and eat them all, I won’t judge you.

* 5 cups oatmeal

* 2 cups butter
* 2 cups brown sugar
* 2 cups sugar

* 4 eggs or egg substitute
* 2 tsp. vanilla
* 4 cups flour
* 1 tsp. salt
* 2 tsp. baking powder
* 2 tsp. baking soda

* 24 oz. chocolate chips
* 1 8 oz. Hershey Bar grated.
* 3 cups chopped nuts (your choice)

Measure oatmeal, and blend in a blender or food processor to a fine powder.
Cream the butter and both sugars.
Add eggs and vanilla, mix together with flour, oatmeal, salt, baking powder, and baking soda.
Add chocolate chips, Hershey Bar, and nuts.
Roll or scoop into balls, and place two inches apart on a cookie sheet.
Bake for 10 – 12 minutes at 375 degrees.
Let cool and store in an airtight container. Or eat them. Warm would be good. With a nice brandy.
